The 2019 Savigny-lès-Beaune 1er Cru Les Lavières opens in the glass with pretty aromas of peonies, rose petals, sweet wild berries, orange rind, raw cocoa and forest floor. Medium to full-bodied, supple and perfumed, it's sumptuous and melting, with lively acids and a charming, enveloping profile. This is one of the most seductive wines in the range. Rossingol began picking in mid-September, and he has produced a lovely set of wines: rich and gourmand, they're dramatic and elegantly muscular, with ripe fruit tones, powdery tannins and succulent acids. Now comfortably ensconced in his new winery on the Beaune périphérique, Nicolas has arrived at a mature style that's much more classical than his attention-grabbing aesthetic of yesteryear. Today, as I've written before, he numbers among the Côte de Beaune's most serious producers.
