Château Canon 2016 is a prestigious red wine from Saint-Émilion in Bordeaux, France, from a château classified as Premier Grand Cru Classé B. The 2016 vintage is composed of 74% Merlot and 26% Cabernet Franc, and the wine is aged for 18 months in French oak barrels, approximately 70% of which are new.

Vinification occurs parcel by parcel in temperature-controlled stainless steel tanks with gravity filling, and according to the château's technical sheet, a portion of the wine undergoes malolactic fermentation in new barrels, while the rest takes place in stainless steel tanks. This contributes to the wine's precise balance between fruit, structure, and oak.

Composed of 74% Merlot and 26% Cabernet Franc and aged for 18 months in 70% new French barriques, the 2016 Canon is medium to deep garnet-purple in color, and—WOW—it opens with the most stunning perfume of violets, red roses and kirsch, giving way to a core of black cherry preserves, chocolate box, licorice, warm plums and Chinese five spice plus an earthy waft of underbrush. Medium to full-bodied, the palate is completely filled with expressive, perfumed black berry layers accented by lively red fruits and exotic spices, supported by impressively fine-grained tannins and fantastic tension, finishing very long with jaw-dropping energy. Tasted three times, I had one opportunity to taste the 2015 and 2016 Canon side by side. While I love the bold, rich, seductive nature of the 2015, this 2016 kicks it up a notch in terms of polish, precision, depth and persistence. Love the rose petals, iris flowers and pumice stone tannins, combining to give texture and aromatic richness through the palate. Steel, grip and oyster shell salinity speak of the limestone soils in purity and fragrance, more than many of its neighbours, giving an austerity but also vivid character and long life ahead. Great stuff. A full 1% less alcohol than 2015, but no less concentration and power. 45hl/ha yield, 3.57ph, 65% new oak for ageing.

Dark ruby, purple reflections, subtle brightening on the rim. Red berry fruit on the nose, juicy cherry, blueberry, a touch of nougat and a herbal savoury touch. Juicy, pleasant extract sweetness, ripe cherry, fine, supporting tannins, very good length and builds up towards the end. Elegant and persistent.
