De Saint-Gall Orpale Blanc de Blancs Grand Cru Millesime 2008, 150 cl is a magnificent vintage Champagne from Grand Cru vineyards in the Côte des Blancs, made from 100% Chardonnay – the house's prestige cuvée that is only produced in excellent years.

The 2008 vintage has developed a complex and mature profile with notes of baked apples, pear, citrus and brioche, elegant minerality and subtle smoke and toast nuances leading to a long, fresh and full-bodied finish. The champagne has fine, persistent bubbles, a crisp acidity and a harmonious balance between ripe fruit and classic Burgundy charm, making it perfect both as a festive aperitif and with delicate dishes with fish, shellfish or finely cooked white meat.

Aromas of cooked apples, apple pie and salted butter. Flinty and smoky. It all follows through to a full body with layers of fruit, fine bubbles and a juicy, fruity finish. Lots of fruit, yet framed. Drink or hold.

This is a beautifully mature Champagne, with ripe Chardonnay from the Côtes de Blancs now just hinting at toastiness. The wine's freshness is still apparent so that the balance with maturity is just right. Drink this fine wine now, but also age. Roger Voss

Chardonnay

Chardonnay er den ubestridte stjerne blandt hvidvinsdruer. Dyrket overalt fra Bourgogne til Californien, Australien til Sydafrika – den sætter sit præg på fineste hvidvine verden over. Som drue er Chardonnay relativt neutral og regnes ikke som en aromatisk varietet. Det er også derfor, at den kaldes "vinmakerens drue" – det er i kælderen, at dens karakter formes. Valg af gæring, lagring på egetræ og andre teknikker skaber det enorme spektrum af stilarter.

Temperatur: Mellem 8-12°C

- Lette, uoaked Chardonnay (Chablis, mineralske vine): 8-10°C – kold nok til at fremhæve friskhed og syre
- Fyldige, oaked Chardonnay (Bourgogne, New World): 10-12°C – lidt varmere for at frigive cremede, smørrede aromaer
